Chocolate Mousse

Chocolate Mousse



Prep time: 20-30 minutes
Chill time: 2 hours


Ingredients:

· 4 egg yolks
· 2 1/2 cups of heavy whipping cream
· 1/4 cup of pure sugar
· 1/2 cup of chocolate chips
· Cool whip
· Strawberries (optional)


Instructions:

1. Whisk together the 4 egg yolks in a bowl with an electric mixer for 3 to 5 minutes. Slowly pour sugar into the egg mixture while mixing together. 

2. Pour 1 cup of heavy cream into a 2 quart saucepan and cook while whisking often by hand for about 5 minutes on medium heat.

3. Once the cream is heated, slowly add half  (very small amounts at a time) of the heated cream into the egg yolk mixture.  Beat with the mixer.

4. Then slowly pour the egg mixture into the pan with cream. Simmer and beat with a whisk consistently until it thickens. Add chocolate chips and stir until well mixed.

5. Pour into a bowl and refrigerate for 2 hours.

6. Just before taking your chocolate mixture out, beat the remainder of your cream with the whisk for 5 to 7 minutes until very firm. Then fold your chocolate mixture in and mix together.

7. Garnish your mousse with strawberries and cool whip for a nice touch.
